Paloma is the Spanish word for Dove.


Pascale Boucicaut is a culinary artist and cofounder of Paloma. She works hard to resuscitate traditional cooking methods and ingredients which are important for our physical, spiritual, and community well-being. Pascale is also working on Dishes of the Diaspora, an exploration of African Heritage foodways in Philadelphia. Previously, she worked as a chef and restauranteur in Bastimentos, Panama and New York City.


Folklorist Selina Morales is a co­founder of Paloma. She has traveled throughout the world to learn about traditional foodways and to record recipes and stories told about food. Through the Philadelphia Folklore Project, Selina works across Philadelphia collaborating with folk and traditional artists to advance community ­rooted social change.
